Oat Muffins
Delicious and simple recipe. I store it in an airtight container and use within a week. I also freeze some for later use.

- 1 cup Milk Use Almond or coconut milk for vegan
- 1 cup Oats
- 1 Egg For Vegan replace with a banana
- 2 tbsp Coconut Oil
- 1 cup Wholemeal flour
- 2 tbsp Honey Replace with 1 Tbsp of Stevia if you are avoiding sugar
- 2 tsp Baking Powder
- 1/2 tsp Salt
Heat oven to 200C/180C fan/gas 6. Line a muffin trays with paper muffin cases.
Add oats, flour, baking powder and salt to a mixing bowl.
Add egg start to mix, then add the milk
Melt the coconut oil in microwave, take a few second and add to the mix
Then add the honey and make sure all ingredients mixed in
Split the ingredients over the 12 muffin cases and place in over on the middle shelf.
Cook for 20 mins or until golden brown.
Once cook leaver to cool
